You can rename the drive at any time before you boot -- it won't mess up the backup at all.

The item count in the Finder isn't really a good way to judge the volumes. Finder hides things sometimes, when the volume is the boot volume, and not when it's not. As long as you used "Backup - all files" and didn't get any errors, you should be just fine.
